My snow storm blues remedy: the West Wing and pasta with veggies and seafood. Yummm.
What you need:
- The West Wing DVDs (I’m on season 4)
- 1/2 whole wheat rigatoni (or whatever you have on hand)
- 1/4 zucchini
- 1/4 yellow onion
- 2 cloves garlic
- handful of spinach
- canned tomato sauce
- frozen protein (I used a mix of shrimp, bay scallops and calamari. Trader Joe’s, how I love thee).
Bring a pot of water to a boil and add your pasta.
Start a saute pan with the minced 1/4 onion. After that begins to brown add the garlic. After a minute or so throw in the protein, chopped zucchini and spinach, top with as much sauce as you like (I used about 3/4 cup). Cover and let simmer while the protein and veggies cook. Spoon onto your pasta!
